Pineapple Juice and Strawberry Ice

Frozen Pineapple Juice & Strawberry Ice Cubes

These fruity ice cubes are perfect for adding to sparkling water, lemonade, iced tea, or mocktails.

Freeze Time: 4–6 hours
Makes: About 12 ice cubes

Ingredients

  • 1 cup 100% pineapple juice
  • 6–8 fresh strawberries, diced
  • Fresh mint leaves (optional)
  • Small pieces of fresh pineapple (optional)

Instructions

  1. Wash and hull the strawberries, then dice them into small pieces.
  2. Place a few pieces of strawberry into each compartment of an ice cube tray.
  3. Add a small mint leaf or a piece of pineapple to each compartment, if desired.
  4. Pour the pineapple juice over the fruit, filling each compartment about 90% full.
  5. Freeze for 4–6 hours, or until completely solid.
  6. Transfer the frozen cubes to a freezer-safe bag or container until ready to use.

Add 2–4 cubes to:

  • Sparkling water
  • Lemon-lime soda
  • Club soda
  • Lemonade
  • Iced tea
  • Non-alcoholic sparkling rosé
  • Coconut water
